I've posted a small scouting report below.
Emmitt Smith is one of the greatest running backs in NFL history, yet I can envision that, 50 years down the line, people will not consider him as such. He rarely cracks people's lists of the top three running backs of all-time (or even the top five, for that matter). I don't even know of a person who considers the NFL's all-time leading rusher to be the league's best ever running back.
The problem (for others, not for Emmitt) is that Smith wasn't flashy. He wasn't big. He wasn't tremendously fast. He wasn't even very charismatic off of the field.
Instead, Emmitt possessed the "boring" qualities of running backs (but ones that are just as vital as those above, if not more so): great vision, incredible balance, and remarkable short area quickness. Of course, there's also the off-field characteristics, such as determination, but I want to focus on why Emmitt's on-field play was truly under-appreciated.
Fast forward to the nine second mark in the above video. See the move Emmitt made? You may have actually missed it. That quick juke isn't the flashy, in-your-face Barry Sanders-esque sort of move, but it was probably even more effective. That's a move that can't be taught. It was instinctual.
Now forward to 35 seconds. That play, more than any other I can remember, perfectly exemplifies Smith's incredible sense of balance. To this day, I have not seen a running back that could have stayed on his feet after absorbing that hit. Except Emmitt.
Now move to 2:58 into the video. I don't have much to say about that juke, other than it is one of the best I have ever witnessed.
Finally, forward to 3:27 for a series of astounding plays. Emmitt had one of the most devastatingly effective stiff arms I've seen. It wasn't a reckless punch, but rather a controlled, precise jab straight to his target.
Two stiff arms are followed by a play, at the 3:42 mark, where Emmitt again displayed his out-of-this-world balance. If it doesn't appear that difficult, that's because he was that good. The best make it look easy. Emmitt made it appear as child's play.

Play-Calling/Formation Notes

The Chargers said they would blitz the Cowboys, and they did. San Diego came after the Dallas' quarterback 17 times after Oakland blitzed the 'Boys just five times. The Cowboys gained only 88 yards on these plays (5.18 yards-per-play). In my original post-game notes, I remarked that it seemed as though the Cowboys actually let Brewster out on an island at right tackle quite a bit. I was wrong. The Cowboys gained only eight total yards on those plays, although Holland didn't appear to do an awful job on his blocks. He also performed well in pass protection.

Conclusions
Seven 'passes,' two 'fails,' and two 'N/As.' Overall, the Cowboys did a solid job of using this game to accomplish the task which I believe to be the most important in the preseason: analyze your unknown commodities.

After a great week of practice, Martellus Bennett carried that momentum into the game. He looked really good in the passing game. I didn't get a chance to watch his run blocking too much (which I will do tonight and tomorrow), but outside of a false start, he looked really good.
Tony Romo was up and down tonight. He missed a few open receivers and threw a bad interception, but also showed why the back-shoulder throw is going to be an important tool in his arsenal this season as he used it on a touchdown pass to Miles Austin.
Jason Garrett is obviously planning to implement more designed rollouts this season. The Cowboys are running about three times as many this preseason as they did in the regular season last year. It could be an effective method to combat a sometimes porous offensive line.
Pat McQuistan was bad at tackle, and he is worse at guard. There is no way he can possibly make this team.
I need to watch the film, but both Montrae Holland and Robert Brewster appeared to play well. Brewster got a ton of playing time at both left and right tackle. He showed much better footwork tonight and his only noticeable error was a false start.
Doug Free really excels out in space. He blocks much better on tosses and counters than on power runs.
The only major qualm I had with Garrett's play-calling was a 3rd and 1 pass out of "Gun Spread." Of course, it is only preseason and perhaps he just wanted to monitor something with that particular play.

We all know McBriar is one of the best punters in the league. His power, accuracy, and consistency are insane. Instead of watching McBriar punt the ball near the sideline where it could go out of bounds, let him boom it 60 yards downfield so we can observe the Cowboys' coverage units. They improved against the Raiders after a shaky performance in the Hall of Fame game, but with a bunch of new players figuring to get time on special teams, they need more practice.
DO give Jon Kitna more time with the first-team offense.
Suppose Romo goes down mid-season with a 4-6 week injury. To have any shot at making the playoffs, the Cowboys will need to be able to win at least a few of those games. I like Kitna as a backup, but he needs more reps than he's getting. Some of those should come with the first team in an effort to build some sort of cohesiveness.
DO run some dive plays behind Montrae Holland.
Holland actually isn't that much of a downgrade from Kosier. He figures to be the Cowboys' starting left guard for at least the first two weeks of the season, so let's see what he's made of. I'd love to see the Cowboys run a bunch of dive plays in the "1 hole" (right up Holland's butt). Hopefully he'll give us a reason to only be worried about one starter on the offensive line.
